Ingredients:
4 medium zucchinis, spiralized or julienned
2 tablespoons olive oil
3 garlic cloves, minced
1 can (28 oz) crushed tomatoes
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 teaspoon red pepper flakes (optional)
Salt and pepper to taste
1/4 cup grated parmesan cheese (optional)
Fresh basil leaves for garnish (optional)
Instructions:
Heat the olive oil in a large pan over medium-high heat.
Add the minced garlic to the pan, and sauté for 1-2 minutes until fragrant.
Add the can of crushed tomatoes to the pan, and stir well to combine.
Add the dried basil, oregano, red pepper flakes (if using), salt, and pepper to the pan, and stir well to combine.
Bring the tomato sauce to a simmer, and let it cook for 10-15 minutes, stirring occasionally, until the sauce thickens slightly.
While the sauce is cooking, spiralize or julienne the zucchinis into noodles.
Once the sauce has thickened, add the zucchini noodles to the pan, and toss to coat with the tomato sauce.
Cook the zucchini noodles for 2-3 minutes, until they are just tender but still have a bit of crunch.
If desired, sprinkle grated parmesan cheese over the zucchini noodles, and garnish with fresh basil leaves.
Serve the zucchini noodles with tomato sauce hot, as a light and refreshing vegetarian dinner option.
