Vegan Vegetable Stir-Fry with Tofu and Brown Rice
Ingredients:
1 cup brown rice
1 1/2 cups water
1 tablespoon vegetable oil
14 oz firm tofu, drained and cut into cubes
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 large carrot, sliced
1 small onion, sliced
2 garlic cloves, minced
1 tablespoon soy sauce
1 tablespoon cornstarch
1/2 teaspoon ground ginger
Salt and pepper to taste
1/4 cup chopped fresh cilantro (optional)
Instructions:
Rinse the brown rice and add it to a medium-sized pot with 1 1/2 cups of water. Bring the rice to a boil, then reduce the heat to low and let it simmer for about 30 minutes or until the rice is tender and all the water has been absorbed.
While the rice is cooking, heat the vegetable oil in a large skillet over medium-high heat. Add the tofu cubes and sauté for about 5 minutes or until they are golden brown. Remove the tofu from the skillet and set aside.
In the same skillet, add the bell peppers, carrot, onion, and garlic. Sauté for about 5-7 minutes or until the vegetables are tender.
In a small bowl, mix together the soy sauce, cornstarch, ground ginger, salt, and pepper. Add this mixture to the skillet and stir to combine.
Return the tofu to the skillet and stir everything together. Cook for another 2-3 minutes or until the sauce has thickened.
Serve the vegetable stir-fry over the cooked brown rice and garnish with chopped cilantro, if desired.
