Ingredients:
For the Falafel:
2 cups of dried chickpeas, soaked overnight
1 onion, roughly chopped
4 cloves of garlic, minced
1/4 cup of fresh parsley leaves
1/4 cup of fresh cilantro leaves
1 teaspoon of ground cumin
1 teaspoon of ground coriander
1/2 teaspoon of baking powder
Salt and pepper to taste
Oil for frying (e.g. vegetable oil or canola oil)
For the Hummus:
1 can of chickpeas, drained and rinsed
1/4 cup of tahini
1/4 cup of lemon juice
2 cloves of garlic, minced

Chopped cucumbers
Chopped red onion

Instructions:
For the falafel: Drain and rinse the soaked chickpeas and transfer them to a food processor. Add the onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper to the food processor and pulse until the mixture is finely chopped but still has some texture.
Form the falafel mixture into small balls or patties (about 1-2 tablespoons each). Heat the oil in a frying pan over medium heat and fry the falafel until golden brown and crispy, about 3-4 minutes per side. Drain the falafel on paper towels.
