Ingredients:


1 lb shrimp, peeled and deveined

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

1 small onion, sliced

2 cloves garlic, minced

2 tbsp olive oil

Salt and pepper to taste

1 tbsp soy sauce

1 tbsp sesame oil

1 tbsp rice vinegar

1 tsp honey (or an alternative sweetener of your choice)

1 tsp grated fresh ginger

1/4 cup chopped fresh cilantro


Instructions:


In a large skillet or wok, heat the olive oil over medium-high heat.


Add the sliced peppers and onion to the skillet and stir-fry for about 5 minutes, or until the vegetables are tender-crisp.


Add the minced garlic and stir-fry for another 30 seconds.


Add the shrimp to the skillet and stir-fry for 3-4 minutes, or until the shrimp are pink and cooked through.


In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, and grated ginger.


Pour the sauce over the stir-fry and stir to coat everything evenly.
