Ingredients:
1 lb. ground beef
1 medium onion, chopped
3 cloves garlic, minced
2 tbsp. taco seasoning
1 can (14.5 oz.) diced tomatoes with green chilies
1 can (10 oz.) diced tomatoes and green chilies (no salt added)
1 can (15 oz.) black beans, drained and rinsed
1 can (14.5 oz.) beef broth (no salt added)
1/2 cup water
Salt and pepper, to taste
Optional toppings: shredded cheddar cheese, sour cream, chopped cilantro, diced avocado
Instructions:
In a large pot or Dutch oven, brown ground beef over medium heat, breaking it up into small pieces as it cooks. Drain any excess fat.
Add onion and garlic to the pot and cook until onion is tender and translucent.
Add taco seasoning, diced tomatoes with green chilies, diced tomatoes and green chilies (no salt added), black beans, beef broth (no salt added), and water to the pot. Stir to combine.
Bring the soup to a simmer and let it cook for 15-20 minutes, stirring occasionally.
Season with salt and pepper to taste.
Serve the soup hot, garnished with your desired toppings.
