4 bell peppers (any color)

1 onion, chopped

1 tsp. dried oregano

1 tsp. dried basil

1/2 tsp. paprika

Salt and pepper to taste

1/2 cup shredded cheese (optional)


Instructions:


Preheat your oven to 375°F (190°C).


Cut off the tops of the bell peppers and remove the seeds and membranes from the inside.


In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce the heat to low and simmer for 15-20 minutes or until the quinoa is cooked.
