Ingredients:
1 spaghetti squash
2 cups of your favorite tomato sauce
2 zucchinis, sliced lengthwise
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 tablespoon olive oil
Salt and pepper, to taste
Fresh basil, chopped, for garnish
Instructions:
Preheat the grill to medium-high heat.
Cut the spaghetti squash in half lengthwise and scoop out the seeds.
Brush the flesh of the spaghetti squash with olive oil and sprinkle with salt and pepper.
Place the squash halves cut side down on the grill and cook for 20-25 minutes, or until the flesh is tender and easily scooped with a fork.
While the spaghetti squash is cooking, toss the sliced zucchini and bell peppers with olive oil, salt, and pepper.
Grill the zucchini and bell peppers until tender and lightly charred, about 5-7 minutes.
Heat the tomato sauce in a saucepan over low heat.
Once the spaghetti squash is done, use a fork to scrape the flesh into spaghetti-like strands.
