Ingredients:
1 block firm tofu, drained and pressed
2 cups broccoli florets
1 red bell pepper, sliced
1 small onion, sliced
2 cloves garlic, minced
2 tablespoons vegetable oil
1 tablespoon cornstarch
1 tablespoon soy sauce
1 tablespoon rice vinegar
1 tablespoon honey or maple syrup
Salt and pepper, to taste
Cooked rice, for serving
Instructions:
Cut the tofu into small cubes.
In a small bowl, whisk together cornstarch, soy sauce, rice vinegar, honey/maple syrup, and 1/4 cup water.
Heat the vegetable oil in a large pan over medium-high heat.
Add the tofu and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu from the pan and set it aside.
In the same pan, add the sliced onion and bell pepper, and sauté for 3-4 minutes.
Add the minced garlic and sauté for an additional 30 seconds.
Add the broccoli florets to the pan, and stir-fry for 2-3 minutes until the broccoli is bright green and slightly tender.
Pour the cornstarch mixture over the vegetables and stir to combine.
Add the tofu back to the pan and stir until the sauce thickens and coats the vegetables and tofu, about 2-3 minutes.
Season with salt and pepper to taste.
Serve the tofu and broccoli stir-fry over cooked rice.
