Ingredients:
1 block of firm tofu, pressed and cut into cubes
2 cups mixed vegetables (such as bell peppers, broccoli, carrots, snap peas, or mushrooms), chopped into bite-sized pieces
3 garlic cloves, minced
2 tablespoons soy sauce
2 tablespoons hoisin sauce
2 tablespoons vegetable oil
Salt and pepper to taste

Instructions:
Heat the vegetable oil in a large skillet or wok over high heat.
Add the tofu cubes to the skillet, and stir-fry for 5-7 minutes until lightly browned.
Add the chopped mixed vegetables and minced garlic to the skillet, and stir-fry for an additional 3-5 minutes until the vegetables are tender-crisp.
In a small bowl, whisk together the soy sauce and hoisin sauce.
Pour the sauce over the tofu and vegetables in the skillet, and stir well to coat.
Let the tofu and vegetables cook for an additional 1-2 minutes until the sauce is heated through.
Season the tofu stir-fry with salt and pepper to taste.
If desired, top the tofu stir-fry with sesame seeds, sliced green onions, or red pepper flakes before serving.
