2 cups basmati rice, rinsed and drained

1/2 cup plain yogurt
1/2 cup chopped fresh cilantro
1/2 cup chopped fresh mint
1 teaspoon ground turmeric

Salt to taste
3 cups water
2 cups mixed vegetables, chopped (such as carrots, peas, green beans, and potatoes)
Instructions:
Heat the ghee or oil in a large pot over medium heat. Add the sliced onion and cook until softened and lightly browned, about 8-10 minutes.
Add the minced garlic, ginger, and chopped green chilies to the pot. Stir and cook for 1-2 minutes, until fragrant.
Add the chopped tomato to the pot and stir to combine. Cook for 2-3 minutes, until the tomato has softened.
