Ingredients:

For the apple filling:


3 medium-sized apples, peeled and diced

2 tbsp. honey

1 tsp. cinnamon

1/4 tsp. nutmeg

For the oatmeal crumble:


1 1/2 cups rolled oats

1/2 cup whole wheat flour

1/4 cup coconut oil, melted

1/4 cup honey

1 tsp. cinnamon

1/4 tsp. salt


Instructions:


Preheat the oven to 350°F (180°C). Line an 8-inch square baking dish with parchment paper.


In a mixing bowl, combine the diced apples, honey, cinnamon, and nutmeg. Mix well.


In another mixing bowl, combine the rolled oats, whole wheat flour, melted coconut oil, honey, cinnamon, and salt. Mix well.


Press 2/3 of the oatmeal mixture into the bottom of the prepared baking dish.


Pour the apple filling on top of the oatmeal layer.


Sprinkle the remaining oatmeal mixture over the top of the apple filling.


Bake for 30-35 minutes or until the crumble is golden brown and the apple filling is bubbly.


Allow the bars to cool completely in the baking dish before slicing and serving.
