Ingredients:
1 lb. large shrimp, peeled and deveined
3 cups broccoli florets
2 tbsp. vegetable oil
2 cloves garlic, minced
1 tbsp. minced fresh ginger
2 tbsp. soy sauce
1 tbsp. rice vinegar
1 tbsp. honey
1 tsp. cornstarch
2 green onions, thinly sliced
Instructions:
In a small bowl, whisk together the soy sauce, rice vinegar, honey, and cornstarch. Set aside.
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the garlic and ginger and stir-fry for about 30 seconds or until fragrant.
Add the broccoli and stir-fry for 2-3 minutes or until slightly tender.
Add the shrimp and continue to stir-fry for an additional 2-3 minutes or until the shrimp are cooked through and pink.
Pour the soy sauce mixture over the shrimp and broccoli and stir-fry for an additional 1-2 minutes or until the sauce thickens and coats the shrimp and broccoli.
