Here's a recipe for Shrimp and Broccoli Stuffed Portobello Mushrooms:
Ingredients:
4 large Portobello mushrooms, stems removed
1 lb. large shrimp, peeled and deveined
2 cups broccoli florets, chopped
2 cloves garlic, minced
2 tbsp. olive oil
1/2 cup grated Parmesan cheese
1/2 cup breadcrumbs
1/4 cup chopped fresh parsley
Salt and pepper to taste
Instructions:
Preheat oven to 375°F.
Clean the Portobello mushrooms by gently wiping them with a damp paper towel. Remove the stems and gills from the mushrooms with a spoon and discard.
Heat olive oil in a large skillet over medium-high heat. Add garlic and sauté for 30 seconds or until fragrant.
Add the shrimp to the skillet and cook for 3-4 minutes or until pink and cooked through. Remove the shrimp from the skillet and set aside.
In the same skillet, add the broccoli and sauté for 3-4 minutes or until slightly tender.
In a bowl, mix together the cooked shrimp, broccoli, Parmesan cheese, breadcrumbs, parsley, salt, and pepper.
Stuff the Portobello mushrooms with the shrimp and broccoli mixture, pressing it down gently to pack it in.
Place the stuffed mushrooms on a baking sheet and bake for 20-25 minutes or until the mushrooms are tender and the filling is heated through.
Remove from the oven and serve hot.
