Ingredients:


4 large bell peppers (any color)

1 lb. large shrimp, peeled and deveined

3 cups broccoli florets, chopped

1/2 cup red onion, diced

2 cloves garlic, minced

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

2 tbsp. olive oil

Salt and pepper to taste


Instructions:


Preheat the oven to 375°F.


Cut off the tops of the bell peppers and remove the seeds and membranes. Place the bell peppers in a baking dish and set aside.


In a large skillet, heat the olive oil over medium-high heat.


Add the red onion and garlic to the skillet and sauté for 1-2 minutes or until the onion is translucent.


Add the shrimp and broccoli to the skillet and sauté for 3-4 minutes or until the shrimp are pink and cooked through and the broccoli is slightly tender.


Remove the skillet from the heat and stir in the grated Parmesan cheese and chopped parsley. Season with salt and pepper to taste.


Spoon the shrimp and broccoli mixture into the bell peppers, filling them to the top.


Cover the baking dish with foil and bake for 30-35 minutes or until the bell peppers are tender.


Remove from the oven and let cool for a few minutes before serving.
