Ingredients:
1 pie crust (homemade or store-bought)
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
2 cups broccoli florets
1/2 teaspoon salt
1/4 teaspoon black pepper
4 large eggs
1 cup milk
1 cup shredded cheddar cheese
Instructions:
Preheat the oven to 375°F (190°C).
Roll out the pie crust and place it in a 9-inch pie dish. Trim the edges and prick the bottom of the crust with a fork. Set aside.
Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic and cook for 2-3 minutes, or until the onion is translucent.
Add the broccoli florets to the skillet and cook for 5-7 minutes, or until they are slightly softened. Season with salt and black pepper.
In a mixing bowl, whisk together the eggs and milk until well combined.
Sprinkle half of the shredded cheddar cheese over the bottom of the pie crust. Top with the cooked broccoli mixture. Pour the egg and milk mixture over the top.
Sprinkle the remaining shredded cheddar cheese over the top of the quiche.
Bake the quiche in the preheated oven for 40-45 minutes, or until the filling is set and the crust is golden brown.
Remove the quiche from the oven and let it cool for a few minutes before slicing and serving.
