Ingredients:
1 head cauliflower
2 tablespoons vegetable oil
1 small onion, diced
2 cloves garlic, minced
1 cup frozen peas and carrots
2 eggs, beaten (optional for vegan)
3 tablespoons soy sauce
1 tablespoon sesame oil
2 green onions, sliced
Salt and pepper, to taste
Instructions:
Cut the cauliflower into small florets, and pulse in a food processor until it resembles rice.
Heat the vegetable oil in a large pan over medium-high heat.
Add the diced onion and sauté for 2-3 minutes until the onion is translucent.
Add the minced garlic and sauté for an additional 30 seconds.
Add the frozen peas and carrots, and stir-fry for 2-3 minutes until the vegetables are heated through.
Push the vegetables to one side of the pan, and pour the beaten eggs into the other side. Scramble the eggs until cooked through.
Add the cauliflower rice to the pan, and stir-fry for 3-5 minutes until the cauliflower is tender.
In a small bowl, whisk together soy sauce and sesame oil.
Pour the sauce over the cauliflower rice, and stir to combine.
Season with salt and pepper to taste.
Garnish with sliced green onions.
