Ingredients:
4 medium zucchini, sliced lengthwise into thin strips
1 lb ground beef
1/2 cup chopped onion
3 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 teaspoon red pepper flakes (optional)
1 jar (24 oz) sugar-free marinara sauce
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
2 cups shredded mozzarella cheese
Instructions:
Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
In a large skillet, cook the ground beef over medium heat until browned and cooked through. Drain off any excess grease.
Add the chopped onion and minced garlic to the skillet with the beef and continue to cook for 2-3 minutes, or until the onion is translucent.
Add the salt, black pepper, dried basil, dried oregano, and red pepper flakes (if using) to the skillet and stir to combine.
Add the sugar-free marinara sauce to the skillet and stir to combine.
In a separate bowl, mix together the ricotta cheese and grated Parmesan cheese.
Layer the zucchini slices in the bottom of the prepared baking dish.
Spoon a layer of the meat sauce over the zucchini.
Dollop a layer of the ricotta cheese mixture over the meat sauce and spread it evenly.
Sprinkle a layer of shredded mozzarella cheese over the ricotta cheese mixture.
Repeat these layers until all ingredients are used up, finishing with a layer of shredded mozzarella cheese on top.
Cover the baking dish with foil and bake in the preheated oven for 30-35 minutes.
Remove the foil and continue baking for an additional 20-25 minutes, or until the cheese is melted and bubbly and the zucchini is tender.
Allow the lasagna to cool for a few minutes before slicing and serving.
