Ingredients:
4 medium zucchinis, spiralized
1 lb. large shrimp, peeled and deveined
2 cups broccoli florets
3 cloves garlic, minced
1/2 cup chicken or vegetable broth
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
2 tbsp. unsalted butter
2 tbsp. olive oil
2 tbsp. lemon juice
1 tsp. lemon zest
Salt and pepper to taste
Instructions:
Heat olive oil in a large skillet over medium-high heat. Add garlic and sauté for 30 seconds or until fragrant.
Add the shrimp to the skillet for 3-4 minutes or until pink and cooked through. Remove the shrimp from the skillet and set aside.
In the same skillet, add the broccoli and sauté for 3-4 minutes or until slightly tender.
Add the chicken or vegetable broth to the skillet and simmer. Let the broth reduce by half.
Add the heavy cream, Parmesan cheese, butter, lemon juice, and zest to the skillet. Stir until the sauce is creamy and well combined.
Add the zucchini noodles to the skillet and toss with the sauce until the noodles are coated. Cook for 2-3 minutes or until the noodles are slightly softened.
Add the cooked shrimp and broccoli to the skillet and toss with the zucchini noodles.
Season with salt and pepper to taste.
