Ingredients:


4 medium zucchinis, spiralized

1 lb. large shrimp, peeled and deveined

2 cups broccoli florets

4 cloves garlic, minced

1/2 cup chicken or vegetable broth

1/2 cup dry white wine

1/4 cup unsalted butter

2 tbsp. olive oil

2 tbsp. fresh parsley chopped

Salt and pepper to taste

Red pepper flakes (optional)


Instructions:


Heat olive oil in a large skillet over medium-high heat. Add garlic and sauté for 30 seconds or until fragrant.


Add the shrimp to the skillet for 3-4 minutes or until pink and cooked through. Remove the shrimp from the skillet and set aside.


In the same skillet, add the broccoli and sauté for 3-4 minutes or until slightly tender.


Add the chicken or vegetable broth and white wine to the skillet and bring to a simmer. Let the liquid reduce by half.


Add the butter to the skillet and stir until melted.


Add the zucchini noodles to the skillet and toss with the sauce until the noodles are coated. Cook for 2-3 minutes or until the noodles are slightly softened.


Add the cooked shrimp and broccoli to the skillet and toss with the zucchini noodles.


Season with salt and pepper to taste. If desired, sprinkle with red pepper flakes for some heat.
